Spray drying involves atomizing liquid fruit pulp into fine droplets inside a heated chamber where instant evaporation occurs — creating a free-flowing, shelf-stable powder. The process takes roughly 2–3 seconds and preserves colour, flavour, and nutritional compounds. Common Carriers Used: Maltodextrin (DE 18–21), Gum Arabic, Modified Starch.
